This 25 year old Extra Vecchio is certified, bottled and individually numbered by The Consortium of Producers of Traditional Balsamic Vinegar of Modena
This “Traditional” balsamic vinegar made from Lambruschi and Trebbiano grapes was aged for the minimum 25 years using at lest five and as many as seven different kinds of wood. It is matured by slow acidification and progressive concentration through lengthy aging in a series of small wood casks (including acacia, cherry, chestnut, juniper, and oak). The entire process from the required type of grapes to the shape of the bottle and labeling is governed by the producers consortium and only authentic “aceto balsamico tradizionale” receives the Italian government designation of D.O.C. Traditional is aromatic, full bodied, sweet with rich acid and velvety undertones and best used on non-spicy foods such as meat, fish, poultry and pasta after cooking and as a topping for fresh fruit, hard cheese, risotto and even vanilla ice cream. As with all balsamics use sparingly and store in a cool, dark place.
